Win Demarquette’s British Caramel Collection

While other chocolatiers experiment with exotic ingredients like yuzu and wasabi, Marc Demarquettte has turned to our native orchards and gardens for inspiration. “Provenance is key. My ingredients all have a story,” says Marc who takes pride in sourcing British ingredients and knowing his suppliers personally. Will Bowman of Guavas Farm on Cornwall’s Lizard Peninsula, for instance, supplies Marc with double cream.

Marc’s ‘Great British Orchard Collection’ features 12 hand-painted half domes filled with creamy caramel infused with Yorkshire Rhubarb (Award Winner), Devon Strawberry (Award Winner), Somerset Apricot, Oxfordshire Plums, Scottish Raspberry and Cornish Sea Salt.

The caramels boast an intense fruitiness that pairs perfectly with its chocolate casing (either a mild dark 71.1% house blend or silky Malagasy milk chocolate, chosen according to the sweetness and acidity of each fruit). “I want people to experience a piece of summer sunshine when they enjoy my chocolates,” says Marc.
